A Recipe With History! This recipe has been a staple in my baking repertoire for years! During my time at market stalls, these cupcakes were always a crowd favourite.
The perfect balance of coconut’s chewy texture and zesty lime brightness creates a light and fluffy treat that’s simply irresistible. Plus, they’re delicious even with no icing and fresh from the oven!
Texture Matters with the Coconut
For these cupcakes, I prefer using shredded coconut instead of the fine desiccated type. The shredded variety adds a delightful texture that enhances the overall experience and taste of the cupcakes.
Simple Yet Elegant Decorating using Lime and Coconut!
While you could certainly get creative with colourful icing, I like to keep things simple to let the flavours shine. For my Lime and Coconut Cupcakes, I use my signature vanilla Swiss Meringue Buttercream (check out the recipe here).
After the cupcakes cool, I ice them with a plain round tip, dip them in shredded coconut and finish with a slice of freshly cut lime.
